A tasting room for a bean the specialty industry forgot.
For fifty years, the specialty coffee industry optimized for arabica. We bet our cafe on the species everyone overlooked — excelsa — because it grows where arabica can't, produces naturally lower caffeine, and makes a smoother, less acidic cup.
Every espresso, pour-over, and cold brew we serve is 100% excelsa, roasted ten blocks away and pulled within 48 hours. It's the only cafe in the world where every single drink is the third species of coffee — not a blend, not a novelty shot, just the whole menu.
